How recent must the erweiterte Meldebescheinigung be for the Botschaftstermin?
Short answer
For the au pair's visa application, the host family needs an erweiterte Meldebescheinigung (an extended certificate of registration). This should be as current as possible and no older than 12 months.

If the certificate is older
If your existing erweiterte Meldebescheinigung (extended certificate of registration) is already older, we recommend applying for a new certificate from your local Meldebehörde (registration office) in good time before the au pair's Botschaftstermin (the appointment at the German embassy).
